Ingredients

  • 2 Eggplants
  • 1/4 Cup of Tahini
  • 1/4 Cup of Lemon Juice
  • Garlic
  • 1 tbsp of Greek Yogurt
  • Sumac
  • Cumin
  • 1 tsp of Harissa

Instructions

  1. Cut the eggplants in half and place skin side up on a baking sheet, bake for 40 minutes at 425
  2. Remove eggplant from the oven, and let sit skin side up in a strainer until cool
  3. Add tahini, lemon juice, olive oil, garlic, and harissa into a food processor and pure for 1 minute
  4. Scrape the flesh of the eggplant into the food processor with a spoon and add the greek yogurt
  5. Pulse on "chop" a few times until desired texture is achieved
  6. Serve chilled
