2 Eggplants
1/4 Cup of Tahini
1/4 Cup of Lemon Juice
Garlic
1 tbsp of Greek Yogurt
Sumac
Cumin
1 tsp of Harissa
Instructions
Cut the eggplants in half and place skin side up on a baking sheet, bake for 40 minutes at 425
Remove eggplant from the oven, and let sit skin side up in a strainer until cool
Add tahini, lemon juice, olive oil, garlic, and harissa into a food processor and pure for 1 minute
Scrape the flesh of the eggplant into the food processor with a spoon and add the greek yogurt
Pulse on "chop" a few times until desired texture is achieved
Serve chilled
