Leek Goat Cheese Pasta

Ingredients

  • 1 bunch of leeks
  • 1 lb of asparagus
  • 8 oz of Goat Cheese
  • Parsley
  • Paprika
  • 20 oz of Pasta

Instructions

  1. Clean and satutee the leeks
  2. Boil the water, and place in pasta. Add trimmed asparagus 2 minutes before the pasta reaches al dente
  3. Drain pasta and asparagus and retain 1 cup of pasta water
  4. Add leeks, pasta water, goat cheese, paprika, salt, pepper, and parsley and stir together until well mixed
