Winter White Bean Pasta

Ingredients

  • 1 can of White Beans
  • 2 zucchinis
  • 1 lb of mushrooms
  • 1 lb of pasta
  • 5 cloves of garlic
  • Crushed Calabrian Chilis
  • Parmesan Cheese
  • Parsley
  • 1/2 cup of creme Fraiche
  • 1/4 cup of brandy

Instructions

  1. In a large pot, boil salted water for the pasta and cook pasta until al dente
  2. Slice the mushrooms and zucchinis and add to a large pan with olive oil and salt
  3. Once zucchinis and mushrooms have released most of their moisture, add the garlic to the pan and continue to sautee until the garlic is fragrant
  4. Add the white beans and cook, stirring occasionally until there is some browning on the bottom of the pan
  5. Deglaze with the brandy and scrape the bottom of the pan with a wooden spoon to get the yummy brown bits incorporated
  6. Once the alcohol smell has gone away, add the creme Fraiche and parmesan and remove from the heat
  7. Add the veggies/sauce to the pot with the strained pasta
  8. Top with parsley and serve
