Russian tea cakes/Mexican wedding cookies

Ingredients

  • 1 Cup of Butter
  • 1 Teaspoon of Vanilla extract
  • 2 Cups of Flour
  • .25 Teaspoon of Cinnamon
  • 1 Cup of finely chopped nuts
  • 2 Cup of Powdered sugar
  • Dash Of of Salt

Instructions

  1. Preheat oven to 350°
  2. Cream butter and vanilla together until smooth (2-3 min w electric mixer)
  3. In a separate bowl, whisk together flour and 6 tablespoons of powdered sugar
  4. Add butter to the dry mixture and stir until just blended. Add chopped nuts and mix until incorporated
  5. Roll dough into 1 inch balls and place 2 inches apart on a cookie sheet
  6. Bake until just turning golden brown, about 12 minutes
  7. Remove from the sheet and let cool for 15 minutes
  8. Place remaining powdered sugar in a bowl, and roll the cookies in the dough until coated.
