Vodka Sauce with Sausage

Ingredients

  • 8 oz of Tomato Paste
  • 1/2 Cup of Heavy Cream
  • 1 Shallot
  • Garlic
  • 1/4 cup Vodka
  • 4 tbsp of butter
  • Parmesan
  • Basil
  • Hot Italian Impossible Sausages
  • 1 lb of Mafaldine Pasta

Instructions

  1. Mince shallots and garlic and fry in butter until fragrant. In a large pot, boil the pasta
  2. Add the tomato paste and stir continuously until it darkens and is incorporated with the shallots and garlic
  3. Add the sliced sausage and keep it moving to prevent burning
  4. Once the sausage is cooked and browned, reglaze with the vodka and cook until the alcohol smell is gone
  5. Add the cream and stir, then add 1/4 cup of the reserved pasta water and parmesan cheese and stir
  6. Add the drained pasta to the pan with the sauce
  7. Top with pepper, salt to taste, parmesan, and basil leaves
